Ostrich cubes with spiced cashew crunch

    olive oil
  • 100

    cashew nuts
  • 5
    ml
    ground cumin
  • 5
    ml
    ground coriander
  • 5
    ml
    paprika
  • 3
    ml
    cayenne pepper
  • 5
    ml
    salt
  • 4
    ostrich fillets, cubed
  • 125
    ml
    smooth, hot chutney
  • 30
    ml
    red wine vinegar
  • 5
    ml
    dried chilli flakes
  • salt and milled pepper
 

Method

 
Heat 15 ml olive oil in a pan.
Add nuts and spices and roast until golden and crunchy.
Crush in a blender or smash with a mallet and set aside.
Toss ostrich cubes with chutney and red wine vinegar, chilli, salt and pepper.
Marinate for 30 minutes.
Heat remaining oil in a heavy-based pan, add cubes and cook in batches for about six to eight minutes in total.
Serve immediately with cashew nut dip.
