    lemongrass stalks, trimmed

    grapeseed oil

    olive oil

    freshly ground black pepper

    ground coriander
  • 10
    ml
    finely chopped mint

    sugar
  • 150
    ml
    lemon juice
  • 120
    ml
    fish sauce

    verjuice
  • 50

    crushed garlic
  • 100

    sweet chilli sauce
 

Method

 
Remove the prawn shells and alimentary canals, keeping the tails intact.
Blend the marinade ingredients and marinate the prawns in the mixture for three hours.
Soak the vermicelli in hot water until soft and wrap around the prawns.
Deep-fry the prawns in hot oil until golden brown and thread three prawns onto each lemongrass stalk.
Whisk together all the dipping ingredients and serve in small bowls with the prawns.
