Oriental cucumber salad

  • DRESSING
  • 60
    ml
    rice vinegar
  • 10
    ml
    fish sauce
  • 1
    x 1 cm piece fresh ginger, grated
  • 2
    garlic cloves, crushed
  • pinch sugar
  • SALAD
  • 2
    English cucumbers, cut into shorter lengths (use an extra cucumber, if they're small)
  • fresh coriander
  • unsalted peanuts
 

Method

 
Blend all the ingredients and set aside.
SALAD
Using a sharp-pointed spoon, remove the cucumber seeds and slice the cucumbers into rings.
Arrange on a serving platter and drizzle with the dressing.
Chill until needed.
Garnish with fresh coriander and peanuts just before serving.
