Oriental chicken soup

Ingredients

    ml
    oil
  • 1
    onion
  • 15
    ml
    freshly grated ginger
  • 2
    fresh chillies
  • 1500
    ml
    chicken stock
  • 15
    ml
    soy sauce
  • 125
    ml
    fresh button mushrooms
  • 4
    chicken breast fillets
  • 350
    ml
    Chinese cabbage
  • 35
    ml
    lemon or lime juice
  • 1
    packet/s of two-minute noodles
 

Method

15 minutes
 
Heat oil in a saucepan and add onions, ginger and chilli. SautT for two minutes.
Add chicken stock, soy sauce and mushrooms. Bring to the boil, then reduce heat and simmer for five minutes.
Add chicken and cabbage. Simmer for a further three minutes, then stir in lemon juice and add noodles.
Simmer for two minutes, then season to taste with salt and white pepper, and serve.
