Orange fragrant rice

    basmati rice
  • 60
    ml
    sunflower oil
  • 1
    large onion, finely sliced
  • 30
    ml
    sugar
  • pinch turmeric
  • 5
    ml
    cardamom pods, opened and seeds freshly ground
  • 1
    large orange, rind, blanched
  • 1
    orange, juice
  • 50
    g
    flaked almonds, toasted
  • 50
    g
    pistachio nuts, shelled and halved
  • 50
    ml
    sultanas
  • 30
    ml
    candied citrus peel
 

Method

30 minutes
 
Rinse rice in cold water several times and drain. Heat oil in a heavy saucepan. Cook onion until transparent and soft. Add rice and stir well to coat grains with oil. Add 250 ml water, sugar, seasoning to taste, turmeric, cardamom, orange rind and juice. Bring to the boil and simmer, covered for 10 to 15 minutes until rice is tender. Fluff up with a fork and mix in nuts and fruit. Cover and allow to stand for 10 minutes before serving.
