Orange delight cake

    cake flour

    butter or margarine

    sugar

    eggs, beaten
  • 180

    buttermilk or sour milk
  • 3

    bicarbonate of soda
  • 65

    extra cake flour
  • 10
    ml
    grated orange rind
  • 250
    ml
    dates, chopped
  • 250
    ml
    walnuts, chopped
  • Syrup
  • 125
    ml
    castor sugar
  • 5
    ml
    grated orange rind
  • 180
    ml
    fresh orange juice
 

Method

 
1. Pre-heat oven to 180 degrees. Sift flour, salt and baking powder together. Cream butter or margarine with sugar in a large mixing bowl, add eggs and beat well.
2. Add dry ingredients alternately with butter or sour milk to which bicarbonate of soda has been added.
3. Sprinkle extra flour onto nuts and dates and rub through. Add, with orange rind, to cake mixture.
4. Spoon mixture into a well-greased tube tin and bake for 50-55 minutes, or until done.
5. Make syrup by mixing castor sugar and orange juice together.
6. Add orange rind and stir to dissolve sugar. Place in the refrigerator.
7. Remove cake and pour over syrup. Return to oven for a further 5 minutes. 8. Remove from oven and allow to cool in tin before turning out.
