Orange and walnut stuffing

    fresh breadcrumbs (white or brown bread)
  • 2
    oranges, grated rind
  • 30

    fresh sage, chopped finely
  • salt and freshly ground black pepper

    butter for frying
  • 1
    large onion, finely chopped
  • 1
    fresh turkey liver, chopped
  • 50

    walnuts, roughly chopped
  • 65
    ml
    melted butter
  • 75
    ml
    fresh orange juice
  • 45
    ml
    brandy
  • 1
    egg, beaten
 

Method

 
1. In a large mixing bowl, using two forks or clean hands, mix breadcrumbs, orange rind, herbs and seasoning together. Set aside. 2. In a frying pan, heat the butter and sweat onion over a low heat until transparent. Increase the heat and add the liver; fry quickly until pink inside. Add walnuts and fry for 1 minute, remove and cool this mixture before adding to breadcrumb base. 3. Add melted butter, orange juice, brandy and enough egg to bind stuffing. Adjust seasoning.
