Orange and chocolate self-saucing pudding

    vanilla essence

    large eggs, lightly beaten

    orange, grated rind and juice
  • SAUCE
  • 30

    cocoa powder
  • 85

    soft brown sugar
  • 300
    ml
    milk
  • whipped cream, to serve (optional)
 

Method

40-60 mins
 
Sift cocoa and flour together. In a large bowl, cream butter and sugar until light. Beat in vanilla and eggs and fold in flour mixture. Mix in about 30 ml orange juice to form a dropping consistency and pour into a greased one itre ovenproof dish. SAUCE: Mix the cocoa and sugar and gradually beat in remaining orange juice and milk. Pour over pudding. Bake in a preheated 180 ºC oven for 40 to 60 minutes until firm and spongy to touch. Serve hot or cold with or without cream.
