Orange and Butternut scones

    cake flour
  • 20

    baking powder
  • 2

    salt
  • 30
    ml
    sugar
  • 100
    ml
    milk
  • 60
    ml
    orange juice
  • 45
    ml
    sunflower oil
  • 1
    large egg
  • 5
    ml
    grated orange rind
  • 250
    ml
    cooked butternut, mashed

Oven temperature: 200°C.
1. Sift the flour, baking powder and salt, and add the sugar.

2. In a separate bowl, whisk the milk, orange juice, oil, egg and orange rind. Stir in the butternut. Mix lightly into the dry ingredients. Press out onto a lightly floured surface. Use a palette knife or blunt knife to cut into small rectangles or squares. Place on a greased baking tray and bake for 10 to 15 minutes until cooked through. Serve with butter and grated cheese, honey or jam.
