Ingredients

  • 450
    g
    onions, sliced into rings
  • 100
    g
    leeks, sliced into rings
  • 50
    g
    chives, finely chopped
  • 1000
    ml
    water
  • 750
    ml
    sugar
  • 5
    ml
    mixed spice
 

Method

 
Cook the onions, leeks and chives in a little water until just tender. Drain well. Add 1 litre water, sugar and spices and stir until the sugar has dissolved. Bring to the boil and simmer until the mixture thickens and is no longer runny. Spoon into sterilised jars while still hot. Makes 750 ml.
