Old fashioned lemon cream

  • 625
    ml
    thick cream
  • 175
    g
    castor sugar
  • 2
    large lemons, juice
  • pieces of lemon peel dipped in castor sugar to decorate
 

Method

 
Place cream and castor sugar in a saucepan and boil rapidly over high heat for 3 minutes. Remove from stove and stir lemon juice in thoroughly. Pour into 4-6 small dishes (use 4 for slightly larger portions) and allow to cool. Refrigerate until chilled. Garnish with pieces of lemon peel and serve with biscuits of your choice.
