Okazi salad

    ml
    palm oil
  • 3
    ml
    potash
  • 1
    head of okazi leaves
  • 1
    onion, chopped
  • 1
    hard-boiled egg, quartered
  • 1
    chilli
  • 1
    cassava, peeled and grated
  • 1
    handful
    ugba (African oil bean seeds), grated
  • 1
    dry fish, shredded
  • 1
    stock fish, boiled and sliced
  • 5
    ml
    salt to taste
  • 5
    ml
    maggi instant stock
 

Method

1. Add potash to palm oil. Add a little water, stirring constantly, until sauce thickens. Continue adding water, little by little, until the required consistency is achieved.
2. Rinse okazi leaves thoroughly, then dry and shred thinly.
3. In a large bowl, toss together okazi, onion, egg, chillies, ugba, cassava, dry fish and stockfish.
4. Season with salt and Maggi instant stock, spoon palm oil and potash mixture over and toss to mix.
