    cake flour

    baking powder

    ml
    salt

    extra-large eggs

    oil
  • 200
    g
    soft brown sugar
  • 125
    ml
    milk
  • 15
    ml
    lemon juice
  • 3
    bananas, mashed
 

Method

Preheat the oven to 180 ºC (350 ºF). Spray a 23 x 13 x 7 cm loaf tin with non-stick spray. Combine the dry ingredients in a large mixing bowl. Beat the eggs, oil and sugar together till light and creamy. Add the milk and lemon juice and beat well. Add to the dry ingredients, mixing well. Add the mashed bananas and mix well. Turn into the prepared loaf tin and bake for 45 minutes or till a testing skewer comes out clean when inserted into the centre of the loaf. Cool slightly before turning out onto a wire rack. Cool completely, slice and serve with butter. Makes a medium-sized loaf.
