Oatmeal buttermilk rusks

    self-raising flour
  • 10
    ml
    baking powder
  • 5
    ml
    salt
  • 400
    g
    sugar
  • 1250
    ml
    bran
  • 500
    ml
    oatmeal
  • 500
    g
    margarine, melted
  • 3
    eggs, beaten
  • 500
    ml
    buttermilk
  • 100
    ml
    water (you may need more)
 

Method

Preheat the oven to 180 ºC.

Sift the self-raising flour, baking powder and salt together. Add the sugar, bran and oats and mix well. Mix the margarine, eggs and buttermilk and add to the flour mixture. Mix well. Add water if the mixture is too dry.

Divide the mixture in 2 and turn into 2 greased 37 x 13 cm loaf tins. Bake for about 1 hour or until a testing skewer comes out clean. Turn out and cool slightly. Slice into fingers and dry at 100 ºC.
