Oat bran muffins

    raisins or finely chopped dried fruit

    low-fat milk

    eggs, whisked (or 2 egg whites, whisked)

    oil
  • 60
    ml
    reduced sugar fruit spread (any flavour)
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Grease the base of a 12-hollow muffin tin with margarine. Combine all the dry ingredients in a bowl. Blend the milk, eggs and oil together stirring well. Add to the dry ingredients and mix lightly. Three-quarter fill each hollow in the muffin tin with the mixture. Top each with a teaspoonful of fruit spread and top this with more muffin mixture. Bake for 15 - 20 minutes or until done and golden brown on top. Serve hot with low-fat margarine. Makes 12 muffins.
