Nutty coconut cookies

  • 250
    g
    butter
  • 180
    ml
    castor sugar
  • 250
    ml
    mixed nuts, chopped
  • 250
    ml
    coconut
  • 500
    ml
    cake flour
 

Method

 
Preheat the oven to 180 °C and grease a few baking sheets with butter.
Cream the butter and sugar.
Add the nuts, coconut and flour and mix to form a stiff dough.
Pinch off small pieces of the dough at a time and roll into walnut-sized balls.
Arrange the balls on the prepared baking sheets, leaving enough room in between for the cookies to spread.
Flatten the balls slightly with a fork and bake for 15 minutes or until pale golden brown.
