Nuts and cheese salad

Ingredients

  • SALAD
  • 1
    head lettuce, broken into leaves
  • 2
    stalks celery, sliced in rings
  • 1
    red apple, cored and sliced
  • 150

    cubed feta cheese
  • DRESSING
  • 30
    ml
    olive oil
  • 15
    ml
    red wine vinegar
  • pinch sugar
  • salt and black pepper to taste
  • NUTS
  • 25
    g
    blanched almonds
  • 50
    g
    peanuts
  • 50
    g
    cashew nuts
  • 25
    ml
    butter
  • 1
    ml
    paprika
  • 1
    ml
    cayenne pepper
  • pinch ground cumin (jeera)
  • salt to taste
 

Method

4-5 min
 
Mix all the salad dressing ingredients and pour over the salad. Mix lightly. Sprinkle with cheese. NUTS Stir-fry the nuts for 4-5 minutes in a hot pan till they just begin to brown. Add the butter and seasonings and stir-fry for about 1 minute. Cool slightly before sprinkling over the salad. Serve immediately. Serves 4.
