Mutton curry

    oil

    sticks cinnamon
  • 4
    cardamom pods
  • 3
    cloves
  • 3
    large onions, roughly chopped
  • 30

    freshly grated ginger
  • 20
    ml
    freshly crushed garlic
  • 5
    ml
    leaf masala
  • 5
    ml
    ground turmeric
  • 10
    ml
    ground cumin
  • 10
    ml
    ground coriander
  • 2
    tomatoes, skins removed and finely chopped
  • 1
    kg
    mutton pieces
  • 4
    medium potatoes, peeled and halved
  • 5
    dried curry leaves
  • 20
    ml
    freshly chopped coriander
 

Method

1 hour 30 min
 
Heat oil over medium heat in a large pot. Add cinnamon, cardamom pods, cloves and onion and cook until onion is golden. Add ginger, garlic, spices and 375 ml water. Cook for 2 minutes, then add tomatoes. Cook for a further 2 minutes. Add meat and bring to the boil. Reduce heat and simmer gently for 1 hour. Add potatoes and continue cooking until meat is tender and potatoes are cooked. Add curry leaves, coriander and salt to taste and cook for 5 minutes before serving with rice or roti. Serves 6-8.
