Mustard sauce

    butter

    cloves garlic, crushed
  • 25

    cake flour
  • 5

    salt
  • 3
    ml
    freshly ground pepper
  • 500
    ml
    cream
  • 250
    ml
    sour cream
  • 30
    ml
    prepared French, German or seed mustard
  • 25
    ml
    lemon juice
 

Method

 
Melt the butter in a saucepan over medium heat. Add the garlic and stir-fry for 3 minutes. Remove from the heat, add the cake flour, salt and pepper and stir until a smooth paste is formed. Return to the heat and boil for 2 minutes. Gradually beat in the cream, and simmer over medium heat until fairly thick. Add the sour cream and mustard. Beat until smooth. Taste, season, stir in the lemon juice and spoon into a bowl.
