Mustard glazed corn

    corn on the cob 'mealies' - husks removed
  • 60
    ml
    readymade wholegrain mustard
  • 120
    ml
    white wine vinegar
  • 15
    ml
    honey
  • 50
    g
    butter
  • 60
    ml
    oil
  • 8
    spring onions, sliced
 

Method

 
1. Bring a large pot of water to the boil. Add the corn and cook for 5 minutes. Drain and cool slightly. 2. Mix together the mustard, vinegar and honey. 3. Heat the butter and oil in a large frying pan. Add the corn and spring onions. 4. Spoon the mustard mixture over the corn and cook for about 6-8 minutes, stirring occasionally. The corn should be golden and just beginning to brown. Serve immediately. Serves 4.
