Mussels with ginger and chilli

    sesame oil
  • 1
    leek, white part only, chopped
  • 15
    ml
    finely chopped ginger
  • 2
    garlic cloves, crushed
  • 2
    red chillies, chopped
  • 5
    ml
    brown sugar
  • 250
    ml
    dry white wine
  • 15
    ml
    fish sauce
  • 1
    grated rind and juice of lime
  • 2.50
    kg
    fresh mussels, scrubbed clean
  • 1
    handfull
    chopped fresh coriander
 

Method

Heat the sesame oil in a large saucepan and sauté the leek until soft.

Add the ginger, garlic, chillies and sugar and sauté for 1 minute. Add the wine, fish sauce and lime rind and juice and cook for 1 minute over medium heat.

Put the scrubbed mussels into the liquid and simmer gently for 5 minutes or until the shells open.

Spoon the mussels into dishes and serve as a tapas or starter.
