Mussels in white wine

Ingredients (9)

60 ml fresh chillies — 573
4 cloves garlic — cloves, crushed
2 onions — halved and thinly sliced
1-2 fresh chillies — deseeded and chopped
4 bay leaves
250 ml wine — dry white
1,5 kg mussels — cleaned
125 ml breadcrumbs — white, dried
60 ml fresh parsley — chopped

Method:

Heat 45ml olive oil in a large saucepan over a medium heat. Add the garlic and stir for 30 seconds, then add the onion, chillies and bay leaves. Sauté for a few minutes, until softened.

Add The Wine and bring to a rapid boil. Add the mussels and stir, then cover and boil for 3-4 minutes, shaking the saucepan a few times.

Once the mussels have opened, add the breadcrumbs. Stir and simmer for a minute, then stir in the parsley and remaining olive oil. Serve as soon as possible.
