Mushroom soup

    butter
  • 1
    small onion, finely chopped
  • 1
    clove garlic, crushed
  • 250
    g
    fresh button mushrooms, minced
  • 30
    ml
    flour
  • 900
    ml
    vegetable or chicken stock
  • 250
    ml
    thick cream
  • 250
    ml
    milk
  • freshly grated nutmeg
  • salt and freshly ground black pepper
 

Method

 
1. Melt the butter in a medium-sized saucepan and sauté the onion, garlic and mushrooms until soft and the onion translucent. 2. Stir in the flour with a wooden spoon, and cook for 2 minutes. Pour in the stock and simmer gently for 10 minutes. 3. Stir in the cream, milk and grated nutmeg. Taste for seasoning and tip soup into a blender or a food processor. Process until mushroom soup is very smooth. 4. Return soup to a clean saucepan and reheat gently, adjust seasoning accordingly and serve soup with crusty bread.
