Muffin eggs

Ingredients

  • 250
    ml
    breadcrumbs
  • 125
    ml
    grated cheese
  • 50
    ml
    butter or margarine- melted
  • 6
    eggs
  • salt and pepper
 

Method

Preheat oven to 180°C

Mix the breadcrumbs, cheese and butter or margarine together. Line 6 hollows in a greased muffin pan with crumbs.

Break an egg into each nest and sprinkle with salt and pepper. Cover with foil.

Bake for 10 to 15 minutes or until eggs are set.

Serve for a quick breakfast or as part of a lazy weekend brunch.
