Mozzarella, tomato and avocado salad

    mozzarella cheese, cut into thick slices
  • 1
    avocado, skinned, stoned and thinly sliced
  • 2
    tomatoes, sliced
  • 1
    red onion, sliced
  • 30
    ml
    fresh green or red basil, chopped
  • SALAD DRESSING
  • 30
    ml
    olive oil
  • 45
    ml
    lemon juice
  • sea salt and ground black pepper to taste
 

Method

 
Arrange the mozzarella cheese and avocado slices in alternating layers on a salad platter. Arrange the tomatoes in the centre and finish with onions and basil. Blend the ingredients for the salad dressing and serve separately with the salad. Serves 4-6.
