Moroccan spiced sweet potato stew

Ingredients

    olive oil
  • 1
    onion, sliced
  • 2
    cloves garlic, crushed
  • 7

    ground coriander
  • 7
    ml
    ground cumin
  • 2
    ml
    cayenne pepper
  • 2
    medium sweet potatoes, peeled and cubed
  • 410
    g
    canned plum tomatoes
  • 6
    courgettes, sliced
  • 410
    g
    canned kidney beans, drained
  • 30

    fresh coriander, chopped
  • 50
    ml
    raisins or sultanas (optional)
 

Method

55 minutes
 
Heat oil in a large saucepan.
Add onion and sauté for five minutes until tender.
Add garlic and spices and stir for a minute.
Add the potatoes, tomatoes and courgettes and bring to the boil.
Reduce heat and simmer for about 20 minutes until tender.
Add the beans, coriander and raisins and stir until heated through.
Serve with a dollop of natural yoghurt and naan bread.
