Mom's curried rice

  • oil
  • 200
    g
    fatty meat such as rib, cut into pieces
  • 1
    onion, finely chopped
  • 2
    tomatoes, skinned and finely chopped
  • 250
    ml
    uncooked rice
  • 750
    ml
    water
  • 5
    ml
    salt
  • 5
    ml
    turmeric
  • 10
    ml
    curry powder
  • 10
    ml
    soft brown sugar
  • 10
    ml
    grape vinegar
 

Method

 
Heat a little oil in a heavy-based saucepan and fry the pieces of rib until brown. Remove from the pan and set aside. Sauté the onion until tender and translucent and add the tomato. Return the meat to the saucepan and add the rice, water and salt. Blend the turmeric, curry powder and brown sugar with the vinegar and add to the rice mixture. Simmer until the rice is tender and done. Add more water if necessary. Serve with meatballs or chicken liver patties. Serves 4.
