Mixed vegetable salad

  • 1
    quantity basic tomato sauce
  • 700
    g
    carrots, scraped and cut into rings
  • 250
    g
    cauliflower or broccoli, broken into florets
  • 500
    ml
    whole sweetcorn kernels
  • 1
    green pepper, seeded and diced
  • 2
    cloves garlic, crushed
 

Method

 
Prepare the tomato sauce as described. Boil the carrots in water until slightly tender, add the cauliflower and boil until the vegetables are just tender but still crisp. Drain. Add the sweetcorn kernels, green pepper and garlic along with the boiling sauce and bring to the boil once more. Spoon into sterilised jars while still hot and seal immediately. Makes about 2 litres salad.
