Mixed salad

Ingredients

  • selection of salad leaves
  • 12
    thin slices ham
  • 4
    medium potatoes
  • 8
    fresh mushrooms, sliced, sprinkled with lemon juice
  • 250
    ml
    cooked lentils
  • 6
    small beetroot, cooked and thinly sliced
  • Dressing
  • 125
    ml
    olive oil
  • 125
    ml
    orange juice
  • 15
    ml
    red wine vinegar
  • 5
    ml
    prepared mustard
  • salt and milled black pepper
 

Method

 
Wash salad leaves and refrigerate, covered, until needed.
Just before serving, arrange leaves on a platter with ham in between.
Follow with sliced potatoes and mushrooms and spoon lentils in between.
Add beetroot just before serving.

DRESSING:
Shake ingredients together in a screw-topped jar until well-mixed and spoon over salad just before serving.
