Mixed fruit cookies

    ml
    granulated sugar
  • 250
    g
    margarine
  • 30
    ml
    golden syrup
  • 1
    egg
  • 10
    ml
    bicarbonate of soda
  • 5
    ml
    cold water
  • 500
    ml
    cake flour, sifted
  • pinch of salt
  • 500
    ml
    oats
  • 500
    ml
    coconut
  • 180
    ml
    fruitcake mix, chopped
 

Method

 
1. Melt the sugar, margarine and syrup in a small saucepan until melted; cool slightly. Beat in the egg and add the dissolved bicarbonate of soda. 2. Mix the dry ingredients and chopped fruit together. Add the melted mixture and mix until a stiff dough is formed. 3. Shape into small balls the size of an old 50c coin and press lightly with the back of a fork. 4. Place on lightly greased baking sheets and bake at 180 ºC for 10 to 15 minutes or until golden brown.
