Mixed bean salad

    red kidney beans, drained

    butter beans, drained

    clove garlic, crushed
  • 30

    white wine vinegar
  • 90

    olive oil
  • salt
  • freshly ground black pepper
  • 45

    chopped parsley
  • 1
    small onion, peeled and finely chopped
  • 1
    chilli, deseeded and sliced
  • 1
    red sweet pepper, cubed
  • 1
    large avocado pear, cubed
  • 425
    g
    chickpeas, drained
 

Method

 
Place all ingredients except the avocado in a large bowl. Mix well and leave for about one hour before serving to allow the flavours to develop. Add the avocado and serve. Serves 6-8.
