Minted lamb sandwich

Ingredients

    g
    lamb, thinly sliced
  • 60
    ml
    mint pesto
  • 15
    ml
    oil
  • 1
    French loaf or ciabatta bread, sliced
  • 10
    baby potatoes, cooked and halved
  • 30
    ml
    olive oil
  • 100
    g
    feta cheese, crumbled
  • 150
    g
    baby corn, halved
  • 8
    sun-dried tomatoes, thinly sliced
 

Method

Marinate the lamb in 45 ml mint pesto.
Heat the oil in a frying pan and sauté lamb until cooked through.
Allow to cool.
Toast bread in oven until golden.
Combine remaining ingredients and place on top of bread.
Serve immediately.

Variation
Turn the ingredients into a minted lamb salad.
Cut the bread iinto cubes, drizzle with olive oil and toast until crisp.
Mix with the other ingredients and a bag of salad leaves.
