Mini pizzas

    Cheddar or mozzarella cheese, grated

    dried Italian herbs or origanum
 

Method

Grease a couple of baking trays. Sift the cake flour and salt together. Add the sugar and instant yeast and mix. Add the oil and just enough lukewarm water to form a soft, manageable dough. Knead for about 5-10 minutes or till the dough is smooth and elastic and no longer sticks to your hands. Cover with a sheet of greased plastic wrap and leave for 10 minutes in a warm place. Knead the dough gently and divide into 12-16 balls. Flatten the balls to form circles and arrange on the greased baking trays. Heat the tomato and onion mix, garlic and green pepper for a few minutes. Season to taste with salt and black pepper. Spread the mixture over each pizza base. Arrange the mushrooms and salami slices on top and sprinkle with the cheese and herbs. Leave for about 20 minutes. Bake in a preheated oven at 200 ºC (400 ºF) for about 20 minutes or till the crust is done and the cheese has melted. Makes 12-16 mini pizzas.
