Minestrone soup

    Tbs
    butter
  • 1
    onion - finely chopped
  • 2
    cloves of garlic - finely chopped
  • 3
    baby leeks - chopped
  • 3
    celery stalks - leaves removed and finely chopped
  • 2
    can
    peeled tomatoes
  • 2
    cup
    vegetable stock
  • 3
    Tbs
    tomato puree
  • Salt and black pepper
  • 1
    small butternut - cut into chunks
  • 1
    cup
    chopped green beans
  • 3
    large carrots - roughly chopped
  • 3
    Tbs
    butter - to fry the onion
  • 1
    onion - cut in rings
  • 2
    cup
    baby spinach - washed
  • 1
    cup
    grated Parmesan for serving
  • Fresh basil to serve
 

Method

Heat the butter in your casserole pot and sauté the onion, garlic, celery and leeks until translucent.

Add the tomato, stock and purée and mix through. Add the vegetables, season to taste and bring to a boil. Cover the pot and simmer for 40 minutes.

Meanwhile, heat the other batch of butter and fry the onion until crisp and caramelized.

Right before serving add the spinach to the soup and mix. 

Serve piping hot sprinkled with Parmesan, fried onions, fresh basil and crusty bread.
