Mince pie

    clove garlic, crushed

    onion, finely chopped

    beef stock

    tomato sauce

    Worcestershire sauce
  • pinch thyme

    ground cumin
  • salt and pepper to taste

    cake flour
  • 250

    pasta shells
  • 2
    eggs, whisked
  • 450
    ml
    plain yoghurt
  • 2
    tomatoes, sliced
 

Method

 
Preheat the oven to 200 ºC (400 ºF). Spray an ovenproof dish with non-stick spray. Fry the mince until done. Add garlic and onion and sauté till glossy. Reduce the heat and add the stock and all the seasonings. Simmer for another few minutes then thicken the sauce with a paste made by blending cake flour and water if necessary. Turn into the oven dish. Cook the pasta in boiling salted water until soft and drain well. Spoon on top of the mince. Mix the eggs and yoghurt and pour over the pie. Arrange the tomato slices on top and bake for 40 minutes or until the mixture has set. Serve with a salad. Serves 4-6.
