Mince on skewers

    minced meat
  • 2
    egg yolks
  • 2
    onions, chopped
  • 45
    ml
    chopped parsley
  • 15

    grated lemon peel
  • 15
    ml
    capers, optional
  • salt and pepper
  • oil for frying
  • TO ASSEMBLE
  • 12
    bamboo sticks
  • 3
    fresh or pickled cucumbers, thickly sliced
  • 4
    small firm tomatoes, cut into wedges
  • lettuce
 

Method

 
1. Mix everything except oil. Shape into medium-sized meat balls. 2. Heat oil and fry meatballs until cooked through, allow to cool. 3. Thread meatballs, cucumber, tomato and lettuce on skewers.
