Mince and waterblommetjie dish

    oil
  • onion, chopped

    cloves garlic, crushed
  • 4
    rashers bacon, chopped

    lean mince
  • 820
    g
    waterblommetjies, drained and lightly mash
  • salt
  • pepper
  • 3
    potatoes, peeled and thinly sliced
  • 3
    eggs
  • 100
    ml
    milk
  • 2
    ml
    mustard powder
  • 50
    g
    Cheddar cheese, grated
 

Method

 
Preheat the oven to 180 ºC (350 ºF). Heat the oil in a saucepan and sauté the onion and garlic until soft. Add the bacon and fry. Add the mince and brown lightly. Add the waterblommetjies and season to taste with salt and pepper. Arrange layers of the mince mixture and potatoes in an ovenproof dish, seasoning each layer of potatoes with a little salt. Beat the eggs and milk together and season with mustard powder, salt and pepper. Pour over the dish and sprinkle the cheese on top. Bake for 50-60 minutes until the cheese has browned and the potato slices are soft. Serves 4-6.
