    ml
    milk
  • 1
    cinnamon stick
  • 125
    ml
    cornflour
  • 125
    ml
    flour
  • 5
    ml
    salt
  • 80
    ml
    sugar
  • 2
    egg yolks
  • 2
    egg whites
 

Method

 
Preheat oven to 180 °C.
Heat milk, sugar and cinnamon stick in a heavy-based saucepan and bring to the boil.
Combine cornflour, flour, salt, sugar and egg yolks, and work into a paste.
Add mixture to boiled milk and stir until thick, then allow to cool for a few minutes.
Beat egg whites until they form soft peaks, then gently fold into milk mixture.
Place into a greased pie shell and bake for 20 minutes.
Serve with whipped cream.
