Microwaved pickled onions

    kg
    pickling onions, topped and tailed
  • 20
    g
    salt
  • 50
    ml
    sugar
  • 300
    ml
    white wine vinegar
  • 10
    ml
    mustard seeds
  • 10
    ml
    pickling spice
  • 2
    blades mace
 

Method

12 minutes
 
Place the onions in a large bowl of boiling water and allow to stand for 5 minutes, then peel off the skins.
Drain and sprinkle onions with the salt, then allow to stand overnight.
Place remaining ingredients into a microwave dish and microwave on HIGH for 6 minutes.
Add the onions and microwave on HIGH for a further 6 minutes.
Spoon the onions into sterilised jars and fill with strained vinegar. Allow to cool, and seal.
Makes a 1 litre container.
