Meringues with caramel

    large egg whites
  • 220
    g
    castor sugar
  • 10
    ml
    cornflour
  • 5
    ml
    white vinegar
  • 125
    ml
    caramelised sweetened condensed milk
  • 125
    ml
    mascarpone or thick cream
  • berries or sugared flowers to decorate
 

Method

35 minutes, plus drying out time
 
Beat egg whites until soft peaks form. Add sugar gradually and beat well until thick and glossy.
Sift the cornflour over the mixture and add vinegar. Fold in.
Put small spoonfuls onto greased and lined baking trays. Flatten slightly. Place in a preheated 150 °C oven, reduce heat to 120 °C and bake for 30 to 35 minutes, then turn the oven off and leave the meringues to cool in the oven.
Just before serving, stir the caramel until smooth. Stir in the cream or mascarpone. Put small spoonfuls of the filling onto each meringue. Top with fresh berries or sugared flowers.
