Mediterranean style fish with quinoa

  • Sea Harvest Lemon Pepper Grill Bakes

    quinoa - uncooked
  • 1
    tsp
    reduced sodium vegetable stock
  • 250
    g
    cherry tomatoes
  • 125
    g
    corn
  • 1/2
    cup
    reduced fat feta
  • Fresh rocket - to taste
  • Pepper to taste
 

Method

Roast the cherry tomatoes in the oven with a bit of extra virgin olive oil and cracked pepper.

Cooked the quinoa in 2 cups of hot water and added a teaspoon of reduced salt vegetable stock in order to infuse the quinoa with flavour.

Just before the cherry tomatoes and quinoa are ready, cook the lemon pepper flavour Grill Bakes.

Fluff up the quinoa and add the roasted cherry tomatoes, canned corn, crumbled feta and finished it with a bit of freshly cracked pepper and rocket.
