Mediterranean salad

    green beans, strings removed and chopped
  • 6
    small baby marrows, halved and cubed
  • 4
    baby onions, peeled and quartered
  • 2
    cloves garlic, crushed
  • 45
    ml
    olive oil
  • 200
    g
    green olives, drained and pitted
  • SALAD DRESSING
  • 65
    ml
    olive oil
  • generous pinch ground cumin (jeera)
  • pinch cayenne pepper
  • handful fresh parsley
  • 45
    ml
    fresh lemon juice
  • 1
    ml
    salt
 

Method

 
Preheat oven to 200 ºC. Place beans, baby marrow and onions in an oven pan. Mix garlic and olive oil and pour over the vegetables. Roast on top rack of oven until just tender, about 30 minutes, and leave to cool slightly. Mix with olives and season lightly with black pepper. Mix salad dressing ingredients well and pour over the salad. Toss thoroughly and leave to stand for about 30 minutes for flavours to develop. Serve with fresh, crusty bread to soak up the juices.
