Mediterranean Couscous Salad

    olive oil

    couscous
  • 300
    ml
    hot vegetable stock
  • 5
    ml
    salt
  • 30
    ml
    lemon juice
  • 10
    sun-dried tomatoes, quartered
  • 2
    avocados, cut into large chunks
  • 100
    g
    black olives
  • 50
    ml
    mixed nuts
  • freshly ground black pepper to taste
  • 2
    handfuls salad greens
 

Method

 
Heat the olive oil in a saucepan. Stir in the couscous, hot stock, salt and lemon juice. Cover, remove the saucepan from the heat and leave to stand for 10 minutes or until the couscous has absorbed the liquid. Gently stir in the tomatoes, avocados, olives and nuts and season with pepper.
Divide the salad greens among 2-3 plates and spoon the couscous mixture on top.
