Mealie porridge fritters cinnamon sugar

    extra-large eggs
  • 250
    slack mealie porridge
  • 450
    cake flour
  • 10
    baking powder
  • pinch salt
  • about 50 ml (1/5 c) milk
  • oil for deep-fat frying
  • cinnamon sugar for sprinkling


Whisk the eggs in a mixing bowl and stir in the mealie porridge. Add the cake flour, baking powder and salt. Mix well. Add the milk to form a fairly slack batter. Heat oil for deep-fat frying in a heavy-bottomed saucepan. Drop spoonfuls of the batter into the hot oil. Fry until golden brown on the outside. Drain on paper towelling. (To make bite-sized fritters, drop the batter into the oil using a teaspoon.) Sprinkle the fritters with cinnamon sugar while still hot. Serve hot. Makes about 10 fairly large fritters.
