Mealie meal dumpling with vegetables

    milk
  • 250
    ml
    water
  • 4
    eggs
  • 410
    g
    mixed vegetables, drained
  • 50
    g
    sugar
  • 240
    g
    cake flour
  • 120
    g
    mealie meal
  • 10
    ml
    baking powder
 

Method

 
Beat together milk, water and eggs. Add vegetables. Sift the dry ingredients together and add to egg mixture. Mix to a smooth soft dough. Pour into a large greased enamel dish. Place in a saucepan about a third full with boiling water. Steam gently for about one hour or until dumpling is cooked. (Add more water to saucepan if it dries out during cooking).
