Mealie-meal cookies

    cold, cooked mealie-meal porridge
  • oil
  • 1
    onion, finely chopped
  • 1
    potato, peeled and thinly sliced
  • 410
    three-bean salad
  • salt and freshly ground black pepper


Rinse a cup with cold water and press the mealie-meal porridge into the cup. Turn out and slice. Heat oil in a pan and fry the mealie-meal porridge slices until golden brown on the outside. Drain on paper towels. Fry the onion in the same pan until tender. Fry potato slices until crisp and done. Add the bean salad and heat until warmed through. Season with salt and pepper if necessary and serve with the mealie-meal cookies. Serves 2-3.
