  • 30
    ml
    gelatine
  • 125
    ml
    cold water
  • 420
    g
    castor sugar
  • 125
    ml
    boiling water
  • red food colouring
  • 10
    ml
    vanilla essence
  • icing sugar in which to roll sweets
 

Method

 
Spray a 2,5 litre dish with non-stick spray. Soak gelatine in the cold water until spongy. Heat slowly until completely dissolved. Add the remaining ingredients except food colouring, vanilla essence and icing sugar, and beat for 7-10 minutes with an electric beater until the mixture thickens. Colour with about 12 drops red food colouring and add vanilla essence. Mix well and pour into the prepared dish. The mixture should be about 1,5 cm deep in the dish. Chill until set and cut into squares. Roll marshmallows in icing sugar. Makes 65 squares.
