Marinated sweet peppers

    red sweet peppers, seeded and quartered
  • 3
    yellow sweet peppers, seeded and quartered
  • 3
    green peppers, seeded and quartered
  • olive oil for brushing

    cloves garlic, crushed

    freshly squeezed lemon juice

    chopped fresh origanum, parsley or basil
  • salt and freshly ground black pepper

    anchovy fillets (optional)
  • few peppadews (optional)


Preheat the oven grill. Place the sweet peppers on a baking sheet, skin-side facing up, and brush with olive oil. Grill until the skins begin to blister and turn black. Place the sweet peppers in a plastic bag and seal it. Cool slightly in the bag, then remove the skins. Place the sweet peppers in a serving dish. Mix the olive oil with the garlic, lemon juice and herbs and season well with salt and black pepper. Pour over the sweet peppers and mix. Top with anchovy fillets and peppadews, if desired.
