Marinated potato salad with bacon and tomatoes

    baby potatoes, scrubbed clean
  • 250
    ml
    cherry tomatoes, quartered
  • 125
    g
    packet back bacon, grilled and chopped into smaller pieces
  • 1
    spring onion, chopped
  • 15
    ml
    fresh parsley, chopped
  • coarse salt and freshly ground black pepper
  • SALAD DRESSING
  • 65
    ml
    olive oil
  • 30
    ml
    balsamic vinegar
  • 30
    ml
    lemon juice
  • honey to taste
 

Method

 
Boil the potatoes in lightly salted water until tender. Drain and add the remaining salad ingredients. Blend the ingredients for the salad dressing and pour over the salad. Mix carefully and chill. Marinate for a few hours before serving and serve cold. Serves 4-6.
