Marbled Madeira cake

    g
    butter
  • 250
    ml
    castor sugar
  • 2
    eggs
  • 5
    ml
    vanilla essence
  • 500
    ml
    flour
  • 10
    ml
    baking powder
  • 250
    ml
    milk
  • a few drops of red food colouring
  • Icing
  • 250
    ml
    icing sugar
  • 30
    ml
    boiling water
  • 2
    ml
    lemon juice
  • a few drops of food colouring
 

Method

45 minutes
 
Preheat oven to 180 ºC.
Beat the butter and sugar well.
Beat in the eggs and essence, until the mixture is light and fluffy.
Sift the flour and baking powder together and mix into the creamed mixture.
Add the milk slowly.
Pour half of the mixture into another bowl and add a few drops of colouring. Mix well.
Spoon dollops of the mixture into a 20-cm greased cake ring. Do not mix.
Bake for 45 minutes or until cooked.
Cool on a wire rack.

Icing: Mix all ingredients together until smooth.
Drizzle icing over the cake.
Pack into a cake tin.
